Hollow out the tomatoes
Cook mince until brown, blend in 1 clove crushed garlic, diced tomatoes, salt, pepper and relish
Once cooked, fill tomatoes. Place sliced cheese over the top and place under the grill until melted.
Serve with a garnish of yellow, red, green and orange diced capsicum, placed around the tomatoes in a ‘flower’ like manner
