A delicious slice,quick to make,always a favourite at functions


  • Arnotts Marie Biscuits

  • 150 grams unsalted butter

  • 250 grams light philly cheese

  • 1 tblspn lemon juice

  • 300 mls thickened cream

  • 1tblspn gelatine dissolved in 1/4 cup boiling water

  • 440gram tin crushed pineapple (drained)

  • 1/2 cup castor sugar

  • Diabetic Pineapple Jelly

    Place all the biscuits in a food processor,add melted butter,then tip mixture into a lamington tin and press down evenly ,refridgerate and prepare filling.Clean food processor,put in cream cheese,cream,lemon juice and sugar and mix until smooth,add gelatine mix then stop the processor,take off the lid and quickly fold in the pineapple,pour onto the set biscuits and refridgerate again.Make the jelly using both packets with 1 cup boiling water and 1 cup of iced water,when cool pour onto the set cream filling,when set cut into pieces and watch it dissappear.This slice is very adaptable because you can change the fruit and use the matching jelly.I use diabetic jelly because it comes in so many wonderful flavours,such as peach and cranberry and doesn't have an after taste as so many diabetic producte have,no-one has picked up on the jellies and this recipe is suitable for diabetics to have also.Try it with any firm fruit,I've made it a strawberry slice with fresh strawberries and strawberry jelly,also with peaches and peach jelly,never any left
