Method for apple:
Heat a large saucepan until medium hot, add the butter and apples and cook for 4-5 minutes until the apples have broken down.
Add the sugar and lemon zest and cook for a few more minutes.
Pour into an ovenproof dish.
Method for topping:
Preheat the grill to medium hot.
Heat a saucepan until medium hot, add half the butter and cook until melted.
Add the flour and cook for a further 2 minutes until thickened and smooth.
Add the milk, whisking all the time, and cook until thickened – 2-3 minutes.
Remove from the heat and add the granulated sugar and beaten eggs, whisking well.
Spoon over the cooked apple in the ovenproof dish.
Mix the demerara sugar and cinnamon together then sprinkle over the top.
Dot with the remaining butter.
Place under the grill until golden brown and bubbling.
