A delicious chilled soup made with ripe fresh tomatoes, cucumber, red capsicum and onions.
Roughly chop all the vegetables and herbs
Place into a food processor / blender / bamix with the oil and puree.
Pass through a sieve for a refined soup or leave a bit chunky (whatever you prefer)
Add in the vinegar and salt & pepper to taste.
Refrigerate until ready to use, and drizzle with a touch of olive oil and thinly sliced basil leaves when serving.
