A delicious chilled soup made with ripe fresh tomatoes, cucumber, red capsicum and onions.


  • Ingredients

  • 500 g Tomatoes vine ripened if possible

  • 0.5 Cucumber halved and de-seeded

  • 1 Garlic Clove peeled

  • 1 birds eye chilli

  • 1 Red Capsicum halved and de-seeded

  • 0.5 Spanish Onion or red

  • 30 mm Sherry or red wine vinegar

  • 50 ml Extra Virgin Olive Oil

  • 15 basil leaves

  • Salt & Pepper


  • Ingredients:

  • 1.

    Roughly chop all the vegetables and herbs

  • 2.

    Place into a food processor / blender / bamix with the oil and puree.

  • 3.

    Pass through a sieve for a refined soup or leave a bit chunky (whatever you prefer)

  • 4.

    Add in the vinegar and salt & pepper to taste.

  • 5.

    Refrigerate until ready to use, and drizzle with a touch of olive oil and thinly sliced basil leaves when serving.
