Roughly chop garlic, ginger, coriander and chilli and put into a hot pan.
Add soy sauce and chicken mince and mix thoroughly before taking off the heat before the chicken mince is cooked.
Remove the mix from the pan and put the pan back on the heat, and add olive oil.
Trim the end of the lemongrass and squeeze a ‘pattie’ of the chicken mince mixture over the end of the lemongrass to make a skewer.
Place the skewers back in the pan on the heat and cook through.
Squeeze the lemon into the labna, and mix in the diced cucumber, chopped coriander and finely diced chilli.
