Chicken with Tarragon Sauce, served on a Bed of Couscous with Roasted Fennel and Sweet Potato

Alex’s main course recipe from Come Dine With Me Australia, series 1.


  • 5 chicken breasts

  • Garlic

  • Oil

  • ½ cup stock

  • Salt & Pepper to taste

  • 300ml cream

  • Worcestershire Sauce

  • Dried Tarragon Leaves

  • Fennel

  • Sweet Potatoes


  • 1.

    Fry the chicken on both sides with oil and garlic. After browning, remove from the pan and put into a covered baking dish. Cook until tender

  • 2.

    Add more garlic to the fry pan and add ½ cup of stock, cream, a dash of Worcestershire sauce, salt, pepper and tarragon leaves. Stir until thick.

  • 3.

    Once the chicken is cooked, add the sauce and serve with roasted fennel and sweet potato.

what about the cous cous, is it just plain, and tips for roasting the fennel ?
