Spinach, goats cheese and pesto salad


  • 8 cups Baby Spinach Leaves

  • 6 tablespoons Soft Goat's Cheese

  • 4 tablespoons Good quality Pesto Basil-You can add crushed, roasted hazelnuts for crunch.

  • 0.5 red Spanish Onion diced

  • 3 tablespoons Extra Virgin Olive Oil

  • 1 tablespoon Balsamic vinegar aged is better

  • Salt & Pepper to taste


  • 1.

    Wash spinach leaves and drain

  • 2.

    Place leaves in a large bowl, add in the red onion, sea salt & pepper

  • 3.

    Add in the oil and vinegar

  • 4.

    Give it a light toss (careful not to bruise the salad)

  • 5.

    Place into a serving bowl and place pieces of goats cheese on top

  • 6.

    Place one large piece of pesto in the middle and serve
