A hearty and healthy soup to satisfy any soul
Heat the olive oil in a large pot and add the onion, leek, carrot, celery, potatoes, parsley stalks and a little salt and pepper.
Saute until onion is soft and then add the garlic and thyme.
Saute for another minute then add the tomatoes, beans and stock.
Simmer for 20 -25 minutes.
Add the pasta and cook for another 10-15 minutes or until pasta is al dente.
Serve and top with Parmesan and parsley leaves.
This recipe goes great with my french baguette bread.
