Joe's Minestrone Siciliana

A hearty and healthy soup to satisfy any soul

Ingredients

  • 1 Tbsp Olive Oil

  • 1 Onion - Chopped

  • 1 Leek - Chopped

  • 1 Clove Garlic - Chopped

  • 2 Carrots - Chopped

  • 2 Celery Sticks - Chopped

  • 3 Potatoes - cut into small cubes

  • 3 Parsley Stalks finely chopped

  • Some Parsley leaves

  • 1L Vegetable Stock

  • 1 1/2 Cups of Shell Pasta

  • 1 400g Can of Italian Chopped Tomatoes

  • 1 400g Can Borlotti Beans - Drained and cleaned

  • 4 Sprigs Thyme

  • Grated parmesan to serve

  • Salt

  • Pepper

Method

  • 1.

    Heat the olive oil in a large pot and add the onion, leek, carrot, celery, potatoes, parsley stalks and a little salt and pepper.

  • 2.

    Saute until onion is soft and then add the garlic and thyme.

  • 3.

    Saute for another minute then add the tomatoes, beans and stock.

  • 4.

    Simmer for 20 -25 minutes.

  • 5.

    Add the pasta and cook for another 10-15 minutes or until pasta is al dente.

  • 6.

    Serve and top with Parmesan and parsley leaves.

Notes

This recipe goes great with my french baguette bread.
