Chicken Cheese Lasagne

Easy to do.
A great blend of flavors.

Ingredients

  • Ingredients:

  • 1 Med. Onion, chopped

  • 1 Clove Garlic, minced

  • ½ Cup Butter

  • ½ Cup Flour

  • 1 Tsp. Salt

  • 2 Cups Chicken Broth

  • 1 ½ Cups Milk

  • 4 Cups Mozzarella Cheese, shredded and divided

  • 1 Cup Parmesan Cheese, grated, and divided

  • 1 Tsp. Dried Basil

  • 1 Tsp. Dried Oregano

  • ½ Tsp. White Pepper

  • 2 Cups Ricotta Cheese

  • 1 Tbsp. Fresh Parsley, minced

  • 9 Lasagne noodles, cooked, and drained

  • 20 oz. Frozen Spinach, thawed and well drained

  • 2 Cups Cooked Chicken, cubed

Method

    Instructions:

    1. In a saucepan, melt butter.

  • 3.

    2. Add Onion and Garlic.

  • 4.

    3. Sauté until tender.

  • 5.

    4. Stir in Flour and Salt.

  • 6.

    5. Cook until bubbly.

  • 7.

    6. Gradually stir in Broth and Milk.

  • 8.

    7. Bring to a boil, stirring constantly.

  • 9.

    8. Boil 1 minute.

  • 10.

    9. Stir in half (2 cups) of the Mozzarella Cheese.

  • 11.

    10. Add half ( ½ cup) of the Parmesan Cheese, stir.

  • 12.

    11. Add Basil, Oregano, and Pepper, stir.

    12. Set aside.

  • 14.

    13. In a bowl, combine Ricotta Cheese, Parsley and remaining Mozzarella Cheese.

    14. Set aside.

  • 16.

    15. Spread ¼ of Cheese Sauce into greased 13x9 baking dish.

    16. Cover with 1/3 of Noodles.

  • 18.

    17. Top with ½ of Ricotta Mixture.

  • 19.

    18. Top with ½ of Spinach.

  • 20.

    19. Top with ½ of Chicken.

  • 21.

    20. Cover with ¼ of Cheese Sauce.

  • 22.

    21. Top with 1/3 of Noodles.

  • 23.

    22. Repeat layers in order.

  • 24.

    23. End with Noodles and Cheese Sauce.

  • 25.

    24. Sprinkle remaining Parmesan Cheese over all.

  • 26.

    25. Bake at 350 F, uncovered for 35-40 minutes.

  • 27.

    26. Let stand 15 minutes.

Notes

I use fresh pasta bought at the supermarket.

I double the sauce and the chicken.

I make two small ones.
