Ham and vegetable fritata

Easy to put together a quick one for a weeknight- eggs with ham and vegies whipped up and cooked in a pan.

Ingredients

  • 1 tbls olive oil

  • 6 large eggs

  • 100ml pure cream

  • 100ml milk

  • 125ml lite sour cream

  • 1 cup chopped ham chunks

  • 1/2 large chopped onion3 shallots sliced finely

  • pre cooked vegetables of your choice (beans, asparagus, peas, corn, carrots etc)

  • sundried tomatoes

  • salt, pepper and herbs to taste.

  • grated lite cheese

Method

  • 1.

    Beat eggs in large bowl and beat in cream, milk and sour cream. Add salt, pepper and herbs.

  • 2.

    In a large pan heat the olive oil and cook the onion and ham.

  • 3.

    When onions are soft, add the vegetable mix to cook before adding well beaten egg mix.

  • 4.

    Spread the grated cheese over the top.

  • 5.

    Allow to cook at a moderate temp. until egg is cooked.

  • 6.

    You can brown the fritata in the oven if desired.

Notes

You can make this recipe vegetarian or with other meat choices.
