Homemade Eggnog Pie

Ingredients

  • Ingredients:

  • 1 1/8 Tsp. Unflavored gelatin

  • ¼ Cup Cold Water

  • ¾ Cup Sugar

  • 2 Tbsp. Cornstarch

  • 2/3 Cup Milk

  • 3 Egg Yolks, lightly beaten

  • 1 Tsp. Vanilla

  • 1 ½ Cups Whipping Cream, whipped

  • 1 9 inch Pastry Shell, baked

  • 1/8 Tsp. Ground Nutmeg

Method

  • 1.

    Instructions:

    1. In a small bowl, soften Gelatine in Cold Water.

  • 3.

    2. Set aside.

  • 4.

    3. In a saucepan, combine Sugar, and Cornstarch.

  • 5.

    4. Gradually stir in Milk until smooth.

  • 6.

    5. Bring to a boil.

  • 7.

    6. Cook and stir for 2 minutes or until thickened.

  • 8.

    7. Remove from heat.

  • 9.

    8. Stir in a small amount of hot mixture into Egg Yolks.

  • 10.

    9. Return all to the pan.

  • 11.

    10. Bring to a gentle boil, stirring constantly.

  • 12.

    11. Remove from the heat.

  • 13.

    12. Stir in Gelatin and Vanilla.

  • 14.

    13. Cool to room temperature, stirring occasionally.

  • 15.

    14. Fold in Whipped Cream.

  • 16.

    15. Pour into pie crust.

  • 17.

    16. Sprinkle with nutmeg.

  • 18.

    17. Refrigerate until set, about 2 hours.

Notes

I use my deep dish pie plate and double the filling. I also decorate with mint leaves and cranberries.
