Easy to make and delicious! The fetta becomes slightly crunchy and ands great texture and flavour.... who knew!!! It is incredibly tasty and the good bit is that it is healthy too.
Cook the onions in the olive oil over a slow heat until they are translucent and well cooked down
Drain the onions from the oil and set aside.
Core and peel the red capsicum and put under the grill skin side up for approximately 9 minutes until the skin is blackened. Peel the charred skin and chop the capsicum into strips.
Put the tomatoes in the oil over a medium heat. Add the garlic, balsamic vinegar and sugar and cook for approximately 20 minutes, until and liquid is cooked out. Break up any chunky bits of tomato remaining.
Spread the tomato mixture over the pizza base and top with the capsicum, onion and mushroom.
Thinly slice the fetta cheese and sprinkle over the pizza.
Season with salt and pepper.
Cook in very hot oven for approximately 30 minutes, depending on the pizza base.
