This Plum sauce is as decadent as it is rich in taste and is best used on BBQ Pork and Duck and as an alternative to Hoisin Sauce for Peking Duck
In a saucepan add up to 1 kg of the pitted plums.
Fill the saucepan with water until it just submerges the plums.
Add 2 heaped tblspn of brown sugar. (you can add more or less to taste)
Add 1/3 of a cup of worcestershire sauce. (you can add more or less to taste)
Add 4 tblspn of soy sauce. (you can add more or less to taste)
Add 1/2 cup of maple syrup. (you can add more or less to taste)
Add cracked pepper to taste.
Bring saucepan to the boil and then set to simmer until contents thicken and become slightly jam like.
Strain the sauce to remove any excess skin from the plums as these were not removed prior to cooking.
