Corn and Capsicum Fritters


  • 2 cups corn kernals

  • 2 red capsicums, chopped

  • 1 small red onion, finely chopped

  • ½ cup coriander leaves, roughly chopped

  • 250g sour cream

  • 4 eggs, lightly beaten

  • 120g self raising flour, sifted

  • Salt

  • Pepper

  • Veg oil


  • 1.

    Place corn, capsicum, onion, coriander, sour cream, eggs and flour in a bowl and combine well to make a batter.

  • 2.

    Season well with salt and pepper. Heat oil in a non-stick fry pan and spoon in 2 tablespoons of batter to make a fritter.

  • 3.

    Cook for 3 minutes on each side or until golden.


Makes about 16 fritters.
