  • 1/3 cup peanut or vegetable oil

  • 1 tbsp ginger, finely sliced or grated

  • 2 garlic cloves, sliced

  • 1 long red chilli, sliced

  • 4 bunch broccolini, trimmed, washed and cut in half lengthways

  • 200g enoki mushrooms, stalks trimmed, quickly rinsed

  • 150g oyster mushrooms, stalks trimmed, quickly rinsed

  • 2 tbsp mushroom or light soy sauce

  • 1 tbsp kepas manis

  • 2 tbsp caster sugar

  • 2 shallots, trimmed, washed and sliced into rounds


  • 1.

    Heat oil in a wok over a high heat until starting to shimmer.

  • 2.

    Add ginger, garlic and chilli and cook for a few seconds, stirring with a spoon.

  • 3.

    Add broccolini and fry for 1 minute. Add mushrooms and toss well.

  • 4.

    Add both soy sauces and sugar and allow to simmer for 30 seconds, tossing a few times to cover broccolini.

  • 5.

    Place in a serving bowl and garnish with shallots.


*Kepas Manis is a thick, sweet soy sauce available from supermarkets and Asian grocery stores.
