Heat oil in a wok over a high heat until starting to shimmer.
Add ginger, garlic and chilli and cook for a few seconds, stirring with a spoon.
Add broccolini and fry for 1 minute. Add mushrooms and toss well.
Add both soy sauces and sugar and allow to simmer for 30 seconds, tossing a few times to cover broccolini.
Place in a serving bowl and garnish with shallots.
