Roast Chicken with Garlic, Lemon and Smoke


  • 3 heads garlic

  • 2 medium chickens, neck and wish bone removed

  • 2 lemons

  • 40ml liquid smoke

  • Salt

  • Pepper

  • Olive oil


  • 1.

    Pre-heat oven to 150C. Wrap garlic in foil and bake for 1 hour or until soft and golden.

  • 2.

    Pass garlic flesh through a course sieve.

  • 3.

    Turn oven up to 180C.

  • 4.

    Grate rind of lemon and combine with garlic and liquid smoke in a medium bowl.

  • 5.

    Place a lemon inside each chicken cavity.

  • 6.

    Use your hands to carefully separate chicken skin from breast and leg meat.

  • 7.

    Push garlic mix under skin.

  • 8.

    Place chickens in a baking tray, season, drizzle with olive oil and bake for 1 hour or until golden and legs are cooked trough. Rest in a warm place for 20 minutes before carving and serving.
