Smoked Ocean Trout & Spinach Pie

I love the combination of smoked trout with spinach perfect for a picnic or spring lunch.


  • I Bunch English Spinach, chopped

  • 100g Smoked Ocean Trout, shredded

  • 200g Mild Feta, grated

  • 100g Parmiggiano Grana, Grated

  • 3 Shortcrust Pastry Sheets, thawed

  • 3 Puff Pastry Sheets, thawed

  • 1 Lemon Zest, grated

  • Eggwash

  • Black Sesame Seeds


  • 1.

    Preheat Oven to 180c and oil a 12 hole non stick muffin tin.

  • 2.

    Wash Spinach well making sure to remove all the grit and dry well.

  • 3.

    Chop spinach coursley and place in large bowl and add trout, feta, parmiggiano and zest and combine.

  • 4.

    Using a round cutter cut 4 rounds out of each pastry square.

  • 5.

    Using the shortcrust place in tray making sure it come up the side of the muffin hole all the way.

  • 6.

    Fill each pastry shell with a couple of spoonfuls of mixture and then top with puff circle and seal with you fingers.

  • 7.

    Make a slit in the top and brush with eggwash and sprinkle with sesame seeds.

  • 8.

    Bake for about 20 miniutes until golden brown.

  • 9.

    Serve with potato salad, green salad or whatever salad you's up to you.


You can mix a small amount of egg mayonnaise with sour cream into the mix if you want a creamier centre
