Rachael's Lemon & Tarragon Buttered Roast Chicken

This is a recipe that adds a beautiful fresh flavour to roast chicken. It's quick and simple and only uses four ingrediants.


  • 1 Chicken for roasting (I'm using a size 15)

  • Fresh or dried tarragon (preferably fresh)

  • 125 g Butter (Please use real butter as Margarine is mostly water and doesn't have the same ommph)

  • 2 Whole Lemons


  • 1.

    Zest and juice lemons, and mix with butter and tarragon.

  • 2.

    Remove gibbits from inside chicken and discard - (You could use these for a gravy to save on wastage.)

  • 3.

    Pat dry the chicken skin.

  • 4.

    Use your hands in between the skin and the flesh and create "holes"

  • 5.

    Spoon the lemon butter & tarragon mix into the holes you've created.

  • 6.

    When you've used all the butter, spread the butter through the chicken by kneading it like dough.

  • 7.

    Cook in a hot oven 180C and cook as usual.
