I love pine-lime splices so I wanted to make an ice cream just as refreshing. My other half wanted to try it with an apricot flavour. This is so refreshing on a hot day. The vanilla Ice cream is a Ben and Jerry's recipe and the apricot sorbet is simply made from apricot nectar and lemon juice
Have everything chilled in the fridge.
Churn the apricot nectar with the lemon juice in an ice cream maker til done.
Put into a container and freeze
Whisk the eggs in a mixing bowl til light and fluffy - 1 to 2 mins.
Whisk in the sugar a little at a time then whisk another minute til blended.
Pour in the cream, milk and vanilla and whisk til blended.
Pour into an ice cream maker and churn til ready.
Combine the Apricot sorbet and the just churned vanilla ice cream and swirl together.
If the sorbet has hardened, just soften it slightly and scrape spoonfuls into the ice cream and fold through.
Put back into freezer for a few hours
