I love pine-lime splices so I wanted to make an ice cream just as refreshing. My other half wanted to try it with an apricot flavour. This is so refreshing on a hot day. The vanilla Ice cream is a Ben and Jerry's recipe and the apricot sorbet is simply made from apricot nectar and lemon juice


  • 2 Eggs

  • 3/4 cup Caster Sugar

  • 2 cups Thickened Cream

  • 1 cup Milk

  • 2 tsp Vanilla Extract

  • 750ml Apricot Nectar

  • 2 Tbsp Lemon Juice


  • 1.

    Have everything chilled in the fridge.

  • 2.

    Churn the apricot nectar with the lemon juice in an ice cream maker til done.

  • 3.

    Put into a container and freeze

  • 4.

    Whisk the eggs in a mixing bowl til light and fluffy - 1 to 2 mins.

  • 5.

    Whisk in the sugar a little at a time then whisk another minute til blended.

  • 6.

    Pour in the cream, milk and vanilla and whisk til blended.

  • 7.

    Pour into an ice cream maker and churn til ready.

  • 8.

    Combine the Apricot sorbet and the just churned vanilla ice cream and swirl together.

  • 9.

    If the sorbet has hardened, just soften it slightly and scrape spoonfuls into the ice cream and fold through.

  • 10.

    Put back into freezer for a few hours

You can use any fruit juice you want for this. I only added the lemon juice to add some contrasting tartness to the apricot - so you wouldn't need to with citrus juices.

We in Brisbane's western suburbs had temps of 40DegC yesterday (not that much cooler today, though humidity was a lot lower, thank heavens!!!) could really, seriously have done with a litre or two of this yesterday!!!! Will file away for future churning. Time to crank up the ice cream maker methinks! Ta Jackie
