Crisp, almondy slice with a hint of honey
Preheat oven to 180DegC
Beat butter & sugar until light and fluffy.
Beat in salt, yolk, extract & zest.
Add flour & mix until just combined.
Press pastry into the base of a baking paper lined 23cm x 33cm pan
Beat the egg white until frothy & brush over pastry base.
Sprinkle the flaked almonds evenly over the base and bake for 30 minutes.
Remove from the oven and brush with 2 tblsp honey and bake for 15 minutes more.
Cool slightly and cut into squares.
I had a squeezepack bottle of Beechworth honey which worked a treat when glazing - just had to drizzle it rather than try brushing it on & dislodging the almonds.
