Fried Rice is a common Chinese fast food, it is one of the basic, but hardest to get right in the professional Chinese kitchen. Since I’m not =P lets relax with our fried rice journey! I twist it in anyway I like, and call it a fried rice, as long as it “looks” like fried rice. This version is with sakura prawns!!
It is pretty perfect in my little home!
Soak the Sakura prawn in water
Beat up egg in a bowl and pan fry it until it’s 60% cooked, leave it in a clean bowl for later use
Deseed the tomatoes and cut up in cubes, leave aside for later use
Toast sakura prawn in a pan until flavour comes out
Heat up pan, add oil in the hot pan, add in the cooked rice, on high heat give it a good stir and make sure every grain of rice is coated with oil
Then add in the 60% cooked egg, sakura prawn, tomato, season with salt and white pepper
Last add in the shallots and coriander
Give it a good stir, then serve up!
You’ll be able to buy sakura dried prawn in any Asian grocery store, be careful though, it’s not the dried shrimp, sakura dry prawn has a light milder taste
