Rinse the potatoes of any dirt.
Place in a sauce-pan and cover with water, mint, garlic and salt to taste.
Place on a moderate heat and simmer gently for 15- 20 minutes until just cooked.
Remove from the heat, drain off the water and add the butter swirl around in the pan, turn out into a serving bowl and serve hot.
