This easy pan-fried fried haloumi Greek cheese with slow roasted tomatoes makes for a simple and delicious starter, or side salad, that’s bursting with flavour.
Preheat the oven to 160’C and line a baking tray with baking paper. Place the tomato in a baking dish and cook for 20 minutes, until they just start to soften and blister
To make the salsa, combine all ingredients in a small bowl and mix to combine or place in a food processor and process until you have a chunky paste, then loose with a little extra olive oil
Heat a frying pan over medium heat with a drizzle of olive oil, and pan fry the haloumi slices until golden on both sides, 2-3 minutes
Arrange cheese on the serving plate, top with the slow roasted tomatoes and drizzle with the salsa
