This easy pan-fried fried haloumi Greek cheese with slow roasted tomatoes makes for a simple and delicious starter, or side salad, that’s bursting with flavour.


  • 400-450g haloumi, sliced into half centimetre thickness

  • 500g vine ripened truss tomatoes

  • ½ cup fresh basil leaves, to garnish

  • Drizzle of olive oil, for pan frying haloumi

  • For the salsa 

  • 150g green olives, pitted and finely chopped

  • ¼ red onion, finely diced

  • 2 Tbsp capers, chopped

  • Juice and zest of 1 lemon

  • 2 Tbsp fresh parsley leaves, chopped

  • 2 Tbsp extra virgin olive oil

  • Sea salt and freshly cracked black pepper, to taste


  • 1.

    Preheat the oven to 160’C and line a baking tray with baking paper. Place the tomato in a baking dish and cook for 20 minutes, until they just start to soften and blister

  • 2.

    To make the salsa, combine all ingredients in a small bowl and mix to combine or place in a food processor and process until you have a chunky paste, then loose with a little extra olive oil

  • 3.

    Heat a frying pan over medium heat with a drizzle of olive oil, and pan fry the haloumi slices until golden on both sides, 2-3 minutes

  • 4.

    Arrange cheese on the serving plate, top with the slow roasted tomatoes and drizzle with the salsa

I love halloumi on Butter lettuce salad with grilled sweet chilli prawns, semi dried toms, red onion, avocado & mango. Drizzle with balsamic dressing ! Delicious

as a vego this recipe is superb yum yum yum i will serve it with my mixed greens, bocconcini and mango salad :)))))))
