My husband LOVES ice cream - especially when it's passionfruit flavoured. I tinkered around with the ingredients til I got the seal of approval. It's very rich but YUM! And this recipe makes 1.5 litres of the stuff


  • 500ml Cream

  • 275ml Light Coconut Cream

  • 100ml Banana flavoured Milk

  • 3/4 cup Caster Sugar

  • 4 Egg Yolks

  • 160ml strained Passionfruit pulp - I use 4 fresh passionfruit and 1 x 170g can of passionfruit pulp

  • 100g White Choc Chips


  • 1.

    Combine cream, banana milk, coconut cream and sugar in a saucepan and slowly bring to the boil.

  • 2.

    Beat the egg yolks in a small bowl.

  • 3.

    Add 1 cup of the hot milk mixture to the yolks and whisk to combine.

  • 4.

    Pour it back into the pot in a steady stream over medium heat til it thickens.

  • 5.

    Take off the heat and stir in the passionfruit juice.

  • 6.

    Pour into a container and cover with clingfilm directly on the surface of the custard, eliminating any air bubbles to prevent a skin from forming.

  • 7.

    Cool for several hours.

  • 8.

    Follow churning procedure for ice cream machine.

  • 9.

    Fold white choc chips through ic cream when it's finished churning.


Removing the seeds from the passionfruit is a labour of love because my husband hates them - but if it were up to me, I'd leave them in.
The addition of the banana milk is not crucial but it does give another depth of flavour. You can substitute plain milk instead.
