The combination of prawns, mango, coconut and just a hint or chilli give this salad all the freshness and flavour of a perfect Summer salad.


  • 12 cooked king prawns, peeled and de-veined

  • 2 cups salad leaves

  • Mango salsa 

  • 1 mango, diced

  • 1 small red chilli, de-seeded and finely chopped

  • 2 shallots, sliced

  • ¼ cup coconut flakes, toasted

  • 1 clove garlic, minced

  • 1 Tbsp fresh ginger, minced

  • 1 Tbsp fresh coriander, chopped

  • 1 Tbsp apple cider vinegar

  • 1 tsp olive oil

  • Sea salt and freshly cracked black pepper


  • 1.

    To make the mango salsa, combine the fresh mango, chilli, shallots, garlic, ginger, coconut, apple cider vinegar, olive oil and coriander in a small bowl and set aside to allow the flavours to combine

  • 2.

    Arrange the lettuce on the plate and divide the prawns and salsa between them

Made this for Christmas day lunch with bbq'd prawn with my favourite Mango Kensigton Pride. Wow flavour explosion, sweet, sour and a hit of chilli!
