I cooked this dish the other day and it was so nice and easy I have to share it...


  • 4 Whole Veal Shanks ( You could use a veal shoulder or leg if whole shanks are hard to get)

  • 100ml Extra Virgin Olive Oil

  • 100ml Sweet white wine

  • Salt and peper to taste

  • Zest of 2 lemons

  • dried oregan to taste

    Brown the meat well all over

  • 2.

    Add the wine to the pan you browned the meat in let it simmer for a couple of minutes.

    Add the rest of the ingridients and know if you have a pressure cooker, cook for hlaf an hour, turn it off, but leave the lid on for another half an hour. It should be melting off the bone when the lid comes off. If you don't have a pressure cooker, you could use a slow cooker and cook for 10 hours and the result should be the same, or even in a dutch oven in the oven for about 5 hours at 120c b.

    I severed it with braised peas and mash and the juices from the pan and everyone had such a smile on their face. It was a delight.
