Preheat Oven 180'C
Cut salmon into 5mm slices
Combine cream cheese, garlic and dill
Layer salmon slices and cream cheese filling
(3 layers of salmon only, 2 layers cream cheese between)
Place one sheet of filo on bench and brush with butter
Then a second and third layer
(keep remaining filo from drying out by placing under a sheet of glad wrap covered with damp tea towel)
Place salmon on top and wrap tightly & neatly
Bake approximately 40 minutes
To make sauce, melt butter and saute shallot
Add cream, dill and wine and boil until cream reduces to a thicker consistency
Serve with baby spinach and steamed veges.
Dill Paste can usually be found in the fresh herb section of the grocery store.
