• FILO

  • 250g cream cheese

  • 2 teaspoons dill paste

  • 1 teaspoon garlic

  • 2 Salmon Fillets

  • melted butter

  • 12 sheets filo pastry


  • 1 chopped shallot

  • 2 teaspoons butter

  • 300mL cream

  • 1 Tab white wine

  • 1 teaspoon dill paste


  • 1.

    Preheat Oven 180'C

  • 2.

    Cut salmon into 5mm slices

  • 3.

    Combine cream cheese, garlic and dill

  • 4.

    Layer salmon slices and cream cheese filling

  • 5.

    (3 layers of salmon only, 2 layers cream cheese between)

  • 6.

    Place one sheet of filo on bench and brush with butter

  • 7.

    Then a second and third layer

  • 8.

    (keep remaining filo from drying out by placing under a sheet of glad wrap covered with damp tea towel)

  • 9.

    Place salmon on top and wrap tightly & neatly

  • 10.

    Bake approximately 40 minutes

  • 11.

    To make sauce, melt butter and saute shallot

  • 12.

    Add cream, dill and wine and boil until cream reduces to a thicker consistency

  • 13.

    Serve with baby spinach and steamed veges.


Dill Paste can usually be found in the fresh herb section of the grocery store.

I made this tonight and everyone loved it! It's quite rich but not overly so. Maybe some grated lemon zest and cracked pepper somewhere would be good - either in the cream cheese mixture or the cream sauce. Totally enjoyed by everyone! Thanks Honeypot - you clever gal!
