• 4 kipler potatoes

  • 4 garlic cloves, skin on

  • 2 tbls olive oil

  • 2 tsp sea salt

  • Cracked pepper

  • 2 barramundi fillets, or a similar white fish

  • Spelt flour

  • Spelt breadcrumbs (Glen we can pretend or make our own using spelt bread)

  • 2 eggs

  • ½ cup soy milk

  • Sea salt

  • 2 tbls olive oil

  • 1.

Scrub clean your spuds then chop them into small chunks. Place on an oven tray with the garlic and coat with the oil and seasoning. Bake for 20-30 minutes at 200oC or until golden.

  • 2.

Meanwhile whisk your eggs in a large, flat bowl and season. Then the breadcrumbs on a similar plate and the milk in a soup plate. Coat your fish first in the flour, then the egg then the breadcrumbs. Repeat with the second piece.

  • 3.

Just before you take your potatoes out of the oven, cook your fish. Put the oil in a hot pan and put the fish in. Cook until golden, about 2 minutes depending on thickness then flip. Cook for another 2 minutes here. Season then take out and drain on kitchen towel.

  • 4.

Serve the fish with the chips and Nasturtium Salad. Have some good quality mayo on the side.
