• 2 chicken breasts

  • The sauce

  • 6-12 fresh red chillis

  • 2 tsp garlic powder

  • 1 teaspoon sea salt

  • ½ teaspoon oregano dried

  • ½ teaspoon fresh thyme leaves

  • ½ tablespoon smoked paprika

  • 100ml olive oil

  • 1 Lemon juice & zest

  • 1 avocado

  • 2 Vine ripened tomatoes


  • 1.

    Slice the breast of chicken thinly and bat out a little if required.

  • 2.

    Season with salt pepper, lemon zest and juice and the thyme leaves.

  • 3.

    Chop the chilis finely add the garlic powder, oregano leaves, a pinch of salt and pepper. Mix in the smoked paprika and stir in the olive oil.

  • 4.

    Grill the chicken quickly and brush with the marinade.

  • 5.

    Serve with the avocado and tomatoes drizzle with olive oil.

I cooked a fish version of this for my dad. He just raved and raved. I was going to use chicken, but my brother was going to the Fish Markets, and I couldn't resist the temptation of fresh, fresh fish, so he bought me some beautiful Flathead fillets. I also baked some halved kipfler potatoes in olive oil, thyme, salt and pepper (lightly cooked in microwave beforehand) Really posh fish and chips on a Friday night. Yum. Thanks for this recipe Gary. I'm a total fan of you and your show. (PS love Janella too)

Cooked for tonights dinner, absolutely loved it! My changes with the sauce, 6 chilli's including the seeds roughly chopped then I added all the ingredients for sauce to blender and added enough oil to make right consistency, pulsed for short while not puree.

I wish there was a "search" facility within this site so I did not have to scroll through all the recipes when I am looking for just one specific ingredient. Great show, though!
