A simple and delicious cake when you have mulberries in season.


  • 250g Mulberries, tailed

  • 125g butter

  • 125g caster sugar

  • 1 tsp vanilla extract

  • 3 eggs

  • 125g self raising flour


  • 1.

    Cream the sugar with butter and vanilla and add the eggs one at a time and continue beating

  • 2.

    Fold in flour

  • 3.

    Pour mix into prepared 20 cm cake tin

  • 4.

    Spread berries evenly over the top

  • 5.

    Bake in hot oven 180C for 45-50 minutes

  • 6.

    Dust with icing sugar and serve with crème fraishe

Sounds wonderful. My tree is bountiful this year so the birds and I are having a feast. Going t try this recipe ASAP.

Evelyn Carolan i sit on the lounge watching tv and i cut the stems with a scissors one by one , or the clippers for cotton
