  • 500gms fish depending on your budget you can use Basa fillets or Salmon (mmmm!)

  • 1 tablespoon olive oil

  • 2 tablespoons red Curry paste

  • 1 tablespoon ketchap manis

  • 1 tablesppon palm sugar

  • 1 cup cream

  • 1/2 to 1 cup water

  • fresh basil

  • fresh coriander

  • large red chillies(chopped)

  • fresg asparagus (blanched)

  • green beans (blanched)

  • bean sprouts

  • lime cut into wedges


  • 1.

    Heat oil in pan

  • 2.

    Add curry paste,cooking on high heat, stirring quickly

  • 3.

    Add kechap manis and palmsugar, still stirring

  • 4.

    Add the chillies

  • 5.

    Reduce heat add cream and water, reduce till sauce becomes thicker,

  • 6.

    Throw in some of the fresh herbs

  • 7.

    Place fish in pan evenly and turn heat right down and cover till fish is cooked

  • 8.

    Add the green vegetabels

  • 9.

    Garnish with bean sprouts and extra chilli , a few sprigs of the herbs and a wedge of lime

  • 10.

    Serve with jasmine rice


add the full cup of water if you wish to keep the flavours light and more of a broth consistency
if you prefer full flavour and spice stick to less water

lol - and the cooking time is 15 hours... bet that fish just falls right apart after that long! Do you make your own red curry paste, or buy the packaged variety Bianca?

I made a very basic version of this tonight, using red emperor fillets but used coconut milk instead of the cream. Delicious! Thanks for the recipe :-)
