Squid stuffed with seasoned pork mince is cooked and served in a light Asian style chicken broth.
Pound Coriander and ginger with Mortar and Pestle, combine the pork mince and remaining ingredients, fill the squid tubes with this mix.
Place the filled squid tubes into simmering light chicken stock. Add chopped shitakes, bamboo, light soy and remaining ingredients to soup and gently simmer until pork mince is cooked.
To serve, slice squid tubes and put them into a deep bowl, pour soup over them and drizzle with sesame oil.
