  • 1 dragon fruit

  • 1-2 tbls grated palm sugar or agave

  • 1 tbls lemon juice

  • 1 tbls lemon rind

  • 3 cups sparkling mineral water

  • 2 mint leaves

  • ice

    Half the fruit and scoop out the flesh into a bender. Add the remainder of the ingredients and blend. Serve in tall cocktail glass with a slice of the jackfruit skin and sprinkled with a little lemon rind.
