Seared Tuna Fresh Bean Salad:
Cut tuna into chunks and brush with oil, add salt and pepper.
Place tuna on a hot grill and sear for a minute.
Blanch the ballotti beans and broad beans in salted water and after a minute add the green beans for a further two minutes.
Place the blanched beans, basil, shallots, olives, 2 dessert spoons of the citrus vinaigrette and mizuna in a mixing bowl and toss.
Season with salt and pepper.
Place salad onto each plate and place chunks of tuna over salad.
Place remaining vinaigrette over each individual plate.
To make Citrus Vinaigrette combine all ingredients together.
