Mini salmon quiches ideal for an appetiser or party favour.


  • 1 Bacon rasher finely chopped

  • 2 Green shallots finely chopped

  • 220g can red salmon, drained

  • ¼ cup grated tasty cheese

  • 1 Tb Mayo

  • ¼ cream or sour cream

  • 2 packets of puff pastry boats (or you can use 2 muffin tins and some frozen puff pastry and make your own)

  • 2 Tb Grated parmesan cheese


  • 1.

    Cook bacon in frying pan until crisp. Add shallots, mix well and remove from heat. Stir in Salmon, tasty cheese, mayo and cream. Mix well. Fill pastry boats with salmon mixture, place on oven proof tray and sprinkle with parmesan cheese. Bake in a moderate oven for 10 minutes.


Filling can be made up a day before required. Fill boats just before heating. Not suitable to freeze or microwave.
