This is a recipe that has been passed down from my Canadian family and one that I love. Kokanee (Salmon)Nut Pie is really really tasty and something a little different....definitely worth trying!
Mix all the topping and base ingredients together thoroughly and set aside 1 cup for the topping. Line your pie pan with the remainder.
Sauté chopped leek and butter in a small fry pan. Mix together in a bowl with the rest of the filling ingredients. Pour into pie pan and sprinkle the top with the cup of dry mixture you set aside earlier.
Bake for 35 – 45 to minutes @ 175˚C (350˚F)
