  • Mix water sugar and glucose together and boil

  • For the terrine:

  • Take the mold and cover with plastic wrap.

  • Add the apricot mousse, and add some apricot slice.

  • Chocolate sponge.

  • Fill it up with the chocolate mousse.

  • Cover it with chocolate sponge

  • Freeze it.

  • Next day:

  • Bake as stripe of sweet dough that matches the size of the terrine.

  • Add apricot jam on top and than add the baked sweet dough and pull it upside down.

  • And on the next day you wrap it with plastic and label and date it.
