A little twist on the old classic, fresh & zesty for summer!

Ingredients

  • 225 gm softened unsalted butter

  • .5 lime, grated zest

  • .5 lime, juiced

  • 90 gm caster sugar

  • 1 egg yolk

  • 275 gm plain flour, sifted

  • Icing:

  • 125 gm softened unsalted butter

  • 2 teaspoons custard powder

  • 1 teaspoon vanilla extract

  • 1 - 1.5 cups icing sugar

Method

  • 1.

    Preheat oven to 180C. Line baking tray with greaseproof paper.

  • 2.

    Cream butter and zest until pale and fluffy.

  • 3.

    Add sugar and juice and mix well.

  • 4.

    Add egg yolk then flour, mix until a soft dough forms.

  • 5.

    Roll into small balls (gumball size) and lightly press with fingers or fork.

  • 6.

    Bake for approximately 20 minutes or until lightly golden.

  • 7.

    Icing:

  • 8.

    Cream butter and vanilla well, add custard powder and enough icing sugar to bring to a fairly still consistency.

  • 9.

    Once biscuits are cooled, pair together with icing.

Notes

Can add .5 teaspoon ground cloves to butter and zest for extra flavour.
You don't have to ice them together, they are lovely just dusted with a little icing sugar and served with coffee.
