This recipe for kangaroo tail soup utilises native herbs to flavour this uniquely Australian dish.


  • 3 Kangaroo tails

  • Pinch Kuccura

  • Pinch Tananmi apple

  • Pinch Pepper berry

  • Pinch Pepper leaf

  • Pinch Mountain Pepper

  • 4 Carrots chopped

  • 1 Celery chopped

  • 1 Parsley bunch (fresh)

  • 2 litres Beef Stock


  • 1.

    Cut kangaroo tail.

  • 2.

    Place the kangaroo tail in the pan and fry.

  • 3.

    Fry the garlic, onion, then add the carrot and celery.

  • 4.

    Add a subtle amount of bush spices, try to be moderate with them.

  • 5.

    Let this simmer, then add the tomato paste and red wine right at the very end.

  • 6.

    Serve this dish with damper or bread.
