For this dish to succeed the goat must be absolutely young and tender. There are many variables with goat meat, so it’s best to check the progress of the cooking as you go and adjust as you go. Serves many!
Set the oven at 180 degrees.
Place the meat evenly on a baking tray.
Sprinkle with salt, pepper, herbs and distribute the tomato evenly around the tray.
Pour water gently from the side of the dish so that it runs under the meat.
Cover with foil and place in oven for 1 ¼ hour and remove foil for last 15 minutes of cooking.
