Serves many (if you use an entire eye fillet as I do on the program, this will provide many sandwiches, depending on your appetite. Or you can use just what you need, the procedure is the same. An average sized eye fillet takes approximately 25 minutes to cook to medium rare in a normal domestic oven )
Truss the fillet with butcher’s string to give it a nice even round shape.
Thread some rosemary through the string, sprinkle with salt and pepper.
Heat an oven proof pan and sear the meat using olive oil on all sides and place in a pre-heated oven at 180 degrees for 25 minutes or longer if you like your meat medium to well done.
When the meat is cooked let it cool as it benefits from a long period of rest.
Use immediately or place in the fridge until needed.
Make up sandwiches according to personal taste.
