One of the easiest sponge cake recipes in the world. And fluffiest!


  • Sponge:

  • 4oz Butter/Margarine

  • 4oz Sugar - Caster/Granulated (which ever you prefer/have in the house, really!)

  • 4oz Self-Raising Flour (for chocolate cake replace 1oz of flour with 1oz of cocoa or chocolate powder)

  • 2 Eggs

  • Splash of Water

  • Pinch of Salt

  • Icing:

  • Icing Sugar

  • Water.

  • Filling:

  • Jam - whatever flavour you want.


  • 1.

    Preheat the oven to gas mark 6/180 degrees centigrade

  • 2.

    Line 2 cakes tins - normal size

  • 3.

    Put all ingredients in a bowl, and whisk. (an eletric hand mixer or food processor is easier, but you can do it by hand)

  • 4.

    Divide the mixture between the two cake tins

  • 5.

    Bake for 20 -25 minutes until golden brown

  • 6.

    Remove from oven and leave to cool

  • 7.

    Spread jam on one cake and place the other one on top.

  • 8.

    Make icing according to packet and spread on top

  • 9.

    Leave to set.
