  • 1/2 pumkin

  • bunch shallots

  • 1 small onion

  • 300gm feta

  • 75 gm parmesan

  • nutmeg,

  • 1 egg

  • shortcrust pastry

  • nigella seeds


  • 1.

    Steam pumpkin, mash put aside to drain

  • 2.

    Sweat shallots and onion, egg (leave a little to cover pasty

  • 3.

    Add pumpkin nutmeg feta and parmesan

  • 4.

    Blind bake sheet of shortcrust pasty

  • 5.

    Cover pumpkin mixture over pastry top with another sheet of pastry.

  • 6.

    Brush with remaining egg sprinkle with nigella and bake 150C for approx 20minutes until brown.
