A great way to use up egg whites - a light, relatively 'healthy' dessert cake.
Preheat oven to 200DegC (180DegC fan-forced)
Well grease a 12 hole muffin pan or 2x6 hole friand pans
Sift flour and icing sugar.
Lightly beat the egg whites with a fork
Stir in butter, almond meal, flour, icing sugar, seeds and zest.
Gently spoon mixture into greased pans.
Bake for approximately 20 minutes.
Cool in pan for 5-10 minutes.
Dust with icing sugar.
