This receipe is SO moist & I like to leave my Banana fairly chunky when I add it to the cake mixture. Delicious with a cuppa.
Pre-heat your oven to 180C Conventional. Grease & line a 20cm Loaf Tin.
After melting the butter, add Milk, Eggs, Vanilla & roughly chopped/mashed Bananas.
In another bowl, sift in both flours & Ground Cinnamon.
Make a well in the centre of the dry ingredients & pour in the wet ingredients.
Mix well until combined & pour into a greased & lined Loaf Tin - approx 20cm long & bake for approx 45 minutes - testing with a skewer towards the end of cooking time. Allow cake to cool in Loaf tin at least 10 minutes before turning out onto a wire rack.
Serve warm or cold.
Sometimes I have also added 1/2 cup of chopped Walnuts to this recipe too - it adds a nice crunch!
