Great for a weekend breakfast or yummy dessert!
Combine flour, baking powder and sugar in a large mixing bowl.
Combine melted butter with buttermilk and eggs and beat until combined.
Allow to stand 30 minutes if time permits.
Heat frypan to moderately hot and spray with cooking oil.
Use an ice-cream scoop or large spoon to place portions in the pan.
Allow to cook 2-3 minutes until small bubbles appear on the surface.
Turn over and cook until the second side is lightly browned.
**Do not ‘squash’ the hotcake.
Remove from pan and repeat.
Can be served with ice cream, syrup, honey, lemon juice or just butter.
