A fantastic salmon recipe from Lagoon Seafood Restaurant voted Australia's Favourite Seafood Restaurant in the 2009 I Love FOOD awards.


  • 10g cajun spice

  • 3 tsp olive oil

  • a pinch of sea salt

  • 200g Atlantic salmon fillet

  • 15ml brandy

  • Cucumber & Yoghurt Raita

  • 2 tbs yoghurt

  • 1/4 cucumber, diced

  • garlic

  • salt


  • 1.

    Mix Cajun spice with olive oil and sea salt, then roll the Atlantic salmon fillet into this mixture. With the skin side up, cook on skillet pan for approx. 1½ minutes then place into the oven for further 2 minutes.

  • 2.

    Remove from oven and glaze with butter heated in the pan with a splash of brandy.

  • 3.

    Serve with a cucumber & yoghurt raita.

    Mix the ingredients together. Season with salt.
