A great fajita recipe from Taco Bill - South Melbourne voted Australia's Favourite Mexican/Latin American Restaurant in the 2009 I Love FOOD awards.


  • 1kg green tiger prawns

  • 1tbs mesquite seasoning

  • 1tsp. cumin

  • 2 tbs Chiplotle sauce

  • 1 tsp salt

  • 1/2 cup oil

  • 60g thinly sliced Spanish onion

  • 30g thinly sliced red capsicum

  • 30 g thinly sliced green capsicum


  • 1.

    Blend dry ingredients with oil, mix and marinate prawns at least 2 hours.

  • 2.

    Heat wok with 2 tbls oil till smoking, toss in vegetables, turn after 45 seconds, toss in prawns and cook till the prawns are heated through.

  • 3.

    Serve on sizzle plater accompanied with guacamole, thinly sliced iceberg lettuce, salsa, sour cream, Mexican herbed rice & warmed flour tortillas.
