An easy recipe for chicken supreme from 1 Two 3 Mediterranean Dining voted Australia's Favourite Mediterranean Restaurant in the 2009 I Love FOOD awards.


  • 4 x 200 g skin on kiev cut chicken

  • 3 bunches asparagus

  • 75 g roast capsicum

  • 100 g feta cheese

  • 50 g mild pepperoni

  • 100 g butter (melted)

  • 30 g fresh garlic

  • potato mash


  • 1.

    Add roast capsicum, feta cheese and pepperoni into bowl, mix well. Lift skin of chicken and stuff mixture under skin. Pan frying chicken 2 minutes each side, place in hot oven for 20 minutes.

    Mince garlic and add to melted butter. Blanch asparagus. Place mash potato on plate followed by asparagus on top of mash. Chicken is placed on top drizzled with garlic butter and serve.
