An easy Italian-ish dish that everyone will love.
Serves 4


  • 1 Tablspoon Olive oil

  • 2 Teaspoons crushed garlic

  • 1 Tablespoon dried Oregano

  • 4 Chicken thigh fillets

  • 1 Red capsicum, sliced

  • 1 chopped zucchini

  • 420g Can of Heinz Big Red Tomato soup

  • Grated cheese ( parmesan and tasty)

  • Salt and Pepper


  • 1.

    First preheat your oven to 180 degrees C

  • 2.

    Then lay out some glad wrap and put the chicken fillets on it then cover with another layer of cling wrap, then with a meat mallet or rolling pin, flatten the fillets until they are of even thickness, about a minute steak thickness. Set aside.

  • 3.

    In a mixing bowl put oil, oregano and garlic in and mix.

  • 4.

    Remove chicken from the cling wrap and put them into the garlic and oregano mixture.

  • 5.

    Heat a frying pan to high and add chicken to brown. About 1 minute either sides.

  • 6.

    When chicken has browned arrange in a baking dish and season with salt and pepper.

  • 7.

    Sprinkle the capsicum and zucchini over the chicken and then pour over the entire can of tomato soup. Then sprinkle the cheese evenly on top.

  • 8.

    Put it in the oven and bake for 25-30 minutes or until chicken has cooked through and cheese is bubbly.
